(vegan, no refined sugar, dairy-free)
These are by far one of my favourite summer treat! They are the perfect sweet pick me up during hot days and they are a great kids sweet pick me up too. Apart from being utterly delicious, they are also very low in sugar and packed with fruit and incredible antioxidants thanks to Love Arctic Bilberry powder.
Ingredients – makes about 6-7 lollies
1 cup of cashews soaked for 8 hours or overnight
½ cup of almond milk – or any other creamy non dairy milk like coconut, cashew or hazelnut
2 tablespoon of coconut yogurt
2 tablespoons of Love Arctic Bilberry powder
½ cup of frozen berries of your choice
2 tablespoon of maple syrup
A dash of vanilla extract
For the berry jam layer:
½ cup of frozen berries
1 tablespoon of maple syrup (optional – I didn’t use any)
Place the ½ cup of frozen berries in a pan with a splash of water on a medium heat. Let the berries cook gently until you have a jam kind of consistency. Remove the pan from the heat and let it cool down completely.
To make the ice lollies drain and rinse the soaked cashews. Add the cashews into a blender and add all the remaining ingredients. Blend for a minute or so until you have a creamy and completely smooth consistency. If your blender is struggle just add a bit more almond milk.
To assemble the ice lollies: pour about ½ a tablespoon of the berry jam at the bottom of the ice lolly mould. Fill it up to the top with the cashew berry cream. Place the ice lollies to set in the freezer for at least 8 hours or overnight.
To pop the ice lollies out of the mould just place the under some warm water and enjoy!
