(vegan, no refined sugar, dairy-free)
I always love when breakfast look and taste almost like a dessert :-) These parfaits are perfect for when you fancy an extra special breakfast. I love the creamy vanilla chia pudding with the filling strawberries oat topped with crunchy granola and fresh berries. For the oats I have used Love Arctic Lingonberry powder which apart from giving a super pretty pink packs so many skin loving antioxidants and vitamin E. These are also a great breakfast to make in advance and store in the fridge ready to be grabbed before heading out of the door.
For the overnight oats:
¾ cup of porridge oats
1 tablespoon of coconut yogurt or yogurt of your choice
½ cup of strawberries
1 tablespoon of Love Arctic Lingonberry Powder
1 ½ cup of almond milk
1 tablespoon of maple syrup (optional – I didn’t use any)
For the vanilla chia pudding layer:
¼ cup of chis seeds
¾ cup of almond milk
½ teaspoon of vanilla extract
Extra coconut yogurt
Fresh berries or fruit of your choice

The night before prepare the overnight oats and the chia pudding. For the chia pudding just whisk together all the ingredients in a bowl. I like to use a whisk to avoid any lumps.
For the overnight oats mash up the strawberries with a fork (you can also use a hand blender) and add them to a bowl with all the other ingredients. Give them a good mix.
Cover both bowl with some cling film and place them in the fridge overnight.
To assemble the parfait starts with the chia pudding layer, then add the overnight oats, top with some yogurt of your choice, granola and fresh fruits.
Store any leftovers in an airtight container for few days.
