(vegan, no refined sugar, dairy-free)
I absolutely love the combination between strawberry and coconut yogurt, the sharpness of the strawberries goes so well with richness and sweetness of the coconut. These gorgeous berries are also in season right now making them even juicer and sweeter. These parfaits are perfect as a quick breakfast on the go, sweet pick me up or a light dessert. You can also make the chia pudding in advance and keep it stored in an airtight container in the fridge for few days and top it with whatever you fancy. To add even more goodies I used Love Arctic Lingonberry powder which is rich in vitamin C and K.
Makes 2 small jars
For the chia layer:
4 tablespoons of chia seeds
1 1/2 cup of almond milk or any other no dairy milk of your choice
A dash of vanilla extract
1 tablespoon of Love Arctic Crisp Lingonberry Powder
1 cup of chopped fresh strawberries
For the coconut layer:
About 1/2 cup of coconut yogurt
Fresh berries of your choice
Place the strawberries Into a blender or food processor. Add a dash of water and blend until you have a puree kind of consistency. Strain the puree with a sieve by pressing the pulp down so you get left with a smooth kind of juice. Mix the strawberry juice with all the other ingredients for the chia layer. Use a whisk to mix everything together to avoid any lumps. Place the chia pudding in the fridge to set for at least 3 hours or overnight.
To assemble the parfait place the chia pudding at the bottom of the glass/jar, top it with the coconut yogurt and decorate with some fresh berries.
If you have any chia pudding leftover store it in airtight container in the fridge for few days.
