(vegan, no refined sugar, dairy-free)
As strawberry season is now in full swing I have been loving this super decadent and naturally sweet smoothie for breakfast or for an afternoon snack. Strawberries and coconut is just a match made in heaven! The coconut cream is optional but it will make the smoothie ultra creamy, decadent and naturally sweet. If you don’t have coconut cream you can also add 1 teaspoon of coconut oil or coconut butter. I love serving with fresh berries and granola but the options are endless, sliced banana, nut butter, and dried fruit will work as well.
I added Love Arctic Organic Lingonberry powder as it’s packed with incredible skin loving antioxidants, Vitamin E and fibre.
1 ½ frozen bananas
1 tablespoon of coconut cream or coconut butter (optional but it will make the smoothie super creamy)
½ cup of frozen strawberries (raspberries will work as well)
½ cup of coconut milk
2 tablespoons of Love Arctic Organic Lingonberry powder
Toppings (all optional):
A dollop of nut butter
Simply place all the ingredients into a blender apart from the coconut milk. Add gradually the coconut milk until you reach the desired consistency. You might not need to use it all, depending on how thick you like it.
Pour the smoothie into a bowl and top with the topping of your choice. If you are in rush just add more liquid so you can pour it into a jar and drink it on the go.
