(vegan, no refined sugar, dairy-free)
I have been so obsessed with this combination lately, is just the best breakfast for chilli morning and I love the contrast of flavour between the jam and the porridge. The chia jam can be also made in advance and enjoy it throughout the week. To pack even more goodness I have added Love Arctic Fresh blackcurrant powder which is rich in a vitamin C, E and K.
1 cup of oats
1,5 cup of almond milk or any milk of your choice + water if needed to cook the porridge
1 tablespoon of peanut butter + extra for drizzling
1 tablespoon of raisins or sultanas (optional but add a bit of sweetness)
Optional: 1 tablespoon of sweetener of your choice
For the berry jam:
1 1/2 cup of frozen or fresh berries of your choice ( I have used raspberries)
1 tablespoon of chia seeds
1 tablespoon of Love Arctic Fresh Blackcurrant powder
Optional: 1/2 tablespoon of maple syrup or coconut sugar
A generous drizzle of peanut butter
A sprinkle of chia seeds
Or whatever you fancy!
Start by making the jam. In a small pan place the berries with a dash of water and let them cook on a medium heat for about 5-10 minutes until they have soften and start to fall apart. Add in the chia seeds, give it a stir and let it cook on a very low heat for another 5 minutes. Remove the pan from the heat and let it cool down. The jam will thicken up even further during the cooling process.
To make the porridge simply place all the ingredients into a pan and cook on a medium heat for about 10 minutes. Add some water if needed and keep stirring until the porridge is creamy and gloppy.
Serve the porridge while still hot with a generous dollop of the chai jam, a drizzle of peanut butter, sliced banana and chia seeds. Enjoy!
Store any leftover jam in the fridge for a week or so.
