This soup is just so simple and it’s a perfect soothing meal whenever you feel a bit run down or you want to give your tummy some serious veggie love :-) It’s packed with alkalizing ingredients like broccoli and spinach which are great to help detoxify the body. The cannellini beans add incredible plant protein which they will keep you fuller for longer. Apart from adding amazing vitamins and minerals, the Nettle tea also adds a lovely fresh flavour that goes so well with the vegetables.
Heat up the coconut oil in a medium size pot, add the chopped onion and garlic and gently fry for 3-4 minutes until the onion is soft and translucent. Add the chopped broccoli and cover with the vegetable stock. Put a lid on the pan and cook on a medium heat for 5-7 minutes until the broccoli are soft. Be careful not to overcook them, you still want them to have a bright green colour. Switch off the heat and stir in the spinach, the cannellini beans and the Nettle Tea. Stir everything together. Transfer the soup into a blender and blend it until it’s smooth and creamy. Add salt and pepper to taste. Serve the soup straight away. I like to top it with some pumpkin seeds, sprouts and pomegranate seeds but it’s also great served with come crunchy warm bread.
Store any leftover soup into an airtight container in the fridge for few days.
