(vegan, no refined sugar, dairy-free)
This has been my favourite on the go breakfast recently. It takes no time to make and it can last in the fridge for few days. I like to double the amount so I can make at least 2 or 3 breakfasts in advance. I just divided it into jars so I can just grab one when I am rushing through the door in the morning. It’s packed with fibre (essential for healthy digestion and clear skin) thanks to Love Arctic Aurora flaxseeds which are also high is omega 3 fatty acids. I love topping it with some fresh or frozen berries and a generous dollop of nut butter.
¾ cup of rolled oats
A handful of raisins
A handful of pumpkin seeds or sunflower seeds
1 tablespoon of Love Arctic Aurora milled flaxseeds
1 tablespoon of chia seeds
Optional: a dash of honey or maple syrup
About 1 cup of almond milk (the amount of milk needed it really depends on your personal preference, I like mine quite gloopy but not too runny, so add in the milk gradually until you have the consistency desired)
2 tablespoons of coconut yogurt or any yogurt of your choice
The night before you are planning to eat this breakfast place all the ingredients into a large bowl and add the almond milk. Mix everything together making sure you have no lumps. Cover the bowl with some cling film and place it in the fridge overnight.
In the morning you should have a creamy, gloopy kind of porridge. Add a splash of almond milk if it’s too thick. I love topping mine with some warmed up frozen berries and a dollop of cashew butter, but other toppings like coconut chips, cacao nibs, a drizzle of honey or some sliced banana are all delicious!
