Cooking Catrin is an Award-winning Austrian blog featuring the most delicious recipes. Catrin created this amazing recipe around #sunrise - organic roasted ground milled flaxseed that is high in omega-3, magnesium, fibre as well as a source of protein and all essential amino acids.
Peel the spring onions and cut into small pieces. Heaten a bit of olive oil in a pot and cook the spring onions for a short moment. Add Risotto rice and fry. Add one to two scoops of vegetable soup and leave until the soup is boiled away while stiring every now and then. Cut the precooked beetroot in very small pieces.
As soon as the vegetable soup is boiled away, add 1-2 scoops more. After around 15 minutes of cooking add the cut beetroot and cook for another 7-10 minutes. When the rice is cooked but still grainy, add the grated parmesan and #sunrise and stir. Spice with salt and pepper. Add the butter at the end. Serve the risotto from deep plates. Add one tbsp of goat cheese on the risotto, spice with pepper and a bit of parmesan.
