(vegan, no refined sugar, dairy-free)
These energy balls have been my favourite snack on the go lately. They are super easy to make and they are great to keep in the fridge for the when the hunger strikes. For this recipe I have almonds but you can totally use any nut you like. I love the combination between the raisin and the cacao as it creates a really rich and decadent flavour. I have added Love Arctic Aurora Flaxseeds which are packed with omegas 3 fatty acids, magnesium, fibre and protein. They store super well in the freezer for a very long time or even in the fridge they will last for at least few weeks. I like to pop few in an airtight container to carry with me when I am out and about to make sure I have healthy snacks on hand.
Makes about 8-10 balls depending on the size
1/2 cup of almonds or ground almonds
1/4 cup of raisins or sultanas
1 tablespoon of Love Arctic Aurora Flaxseeds
2 tablespoons of raw cacao powder
1/4 cup of oats
1-2 tablespoons of rice malt syrup (it work particularly well in this recipes as it’s very sticky and helps to bind the ingredients together)
Place the almonds and the oats into a food processor and blitz until you have a coarse flour. Add in the other ingredients and blitz again until you have a sticky kind of dough. Remove the mixture from the food processor and roll the dough into balls. Spread the shredded coconut into a plat and dust the energy balls. Place the balls in the fridge for about 1/2 an hour to firm up. Enjoy! Store the balls in the fridge or freezer for few weeks.
