(vegan, no refined sugar, dairy-free)
Blueberries and mango is officially my new favourite smoothie combination! It’s naturally sweet and refreshing and by using the coconut milk it creates this gorgeous tropical flavour which I just can’t get enough of!
I love adding Love Arctic Bilberry powder as it’s packed with vitamin C and antioxidants plus it adds extra berry flavour and a gorgeous purple colour.
½ cup of blueberries
½ cup of frozen mango
½ cup or more of coconut milk (I used the tinned one)
2 tablespoons of Love Arctic Bilberry powder
Fresh mix berries (I have used strawberries, raspberries and blueberries)
Other great toppings are: coconut chips, drizzle of nut butter, cacao nibs or chopped nuts
Simply place all the ingredients into a blender apart from the coconut milk. Add gradually the coconut milk until you reach the desired consistency. You might not need to use it all, depending on how thick you like it.
Pour the smoothie into a bowl and top with the topping of your choice. If you are in rush just add more liquid so you can pour it into a jar and drink it on the go. To thin it out coconut water is a great addition too.
