(vegan, no refined sugar, dairy-free)
This is literally a hug in bowl! It is the perfect breakfast when you are craving something chocolately and creamy. The bircher is such a yummy breakfast by itself with some berries or some almond butter and it’s great if you don’t have much time in the morning. To make extra delicious I paired it with this uber creamy chocolate icecream which literally make you feel you are having dessert for breakfast!
¾ cup of rolled oats or porridge oats
A handful of raisins
1 tablespoon of chia seeds
1 tablespoon of Love Arctic Aurora Flaxseeds
Optional: a dash of honey or maple syrup
About 1 cup of almond milk (the amount of milk needed it really depends on your personal preference, I like mine quite gloopy but not too runny, so add in the milk gradually until you have the consistency desired)
2 tablespoons of coconut yogurt or any yogurt of your choice
For the chocolate smoothie:
1-2 frozen banana
2 tablespoons of raw cacao powder
A dash of almond milk enough to create a creamy consistency but not too runny.
The bircher muesli part is best to be made the night before. Place all the ingredients into a large bowl and add the almond milk. Mix everything together making sure you have no lumps. Cover the bowl with some cling film and place it in the fridge overnight.
In the morning you should have a creamy, gloopy kind of porridge. Add a splash of almond milk if it’s too thick.
To make the chocolate smoothie add the frozen banana and raw cacao powder to a blender or food processor. If you don’t have a high speed blender you are probably better off using a food processor.
Blitz everything and add gradually the almond milk. You want to try to use the least amount possible so you have an “icecream” kind of consistency.
To serve add the bircher muesli into a bowl with the chocolate smoothie on the side. Top with your favourite toppings and enjoy!
