This is the perfect breakfast if you are looking for a lower carb, high protein dairy free option.
Although it might sound a bit weird, cashews create the creamiest and silkiest of the consistency which literally will look like the traditional dairy yogurt!
I love adding fresh blueberries and the Love Arctic Fresh Blackcurrant powder, it just creates the perfect naturally sweet combination. Because of its creaminess it is also a great option for a lighter and lower in sugar dessert, just add few cacao nibs or some chopped dark chocolate and you have the perfect after dinner treat!
Apart from being totally delicious this yogurt burst with healthy fats and plant protein thanks to the cashews and skin loving antioxidant thanks to the blueberries and the Fresh Blackcurrant powder.
I love serving mine with homemade granola and fresh berries.
Ingredients - makes a small jar:
Soak the cashew in plenty of cold water for at least 8 hours or overnight.
Drain and rinse the soaked cashews. Place the cashew into a blender and add the almond milk, the blueberries, the Love Arctic Fresh Blackcurrants powder and the maple syrup. Blend well until you have a thick and a creamy consistency. If it looks a bit runny place it in the fridge for 2 hours, this will help the yogurt to thicken up.
Serve the berry yogurt in a bowl with fresh berries and the topping or your choice.
Store it in an air tight container or a jar in the fridge for about 3-4 days.
