(vegan, no refined sugar, dairy-free)
Nothing beats a cold bowl of ice cream on a hot sunny day! This has been my favourite combination lately. I love how the cashews add so much creaminess like proper ice-cream! If you want to make it extra healthy you can also add some cooked and frozen cauliflower, I promise you won’t be able to taste it! To make it even more berrylicious I have added Love Arctic Fresh powder which is rich in vitamin C, E and K.
I love topping it with granola and coconut chips to add extra crunch but any toppings of your choice will be perfect as well!
1/4 cup of cashew soaked overnight or for at least 3 hours
1 cup of mixed frozen berries
1 heaped tablespoon of Love Arctic Fresh powder
1-2 pitted dates (optional for extra sweetness)
1/2 cup or almond or coconut milk
Optional: if you want to add some veggies you can also add a couple of cooked and frozen cauli-flower florets
Nut butter or whatever else you like!
Drain and rinse the soaked cashews. Add them to a blender with all the ingredients. Blend until smooth and creamy. You might need to add more almond milk depending on your blender. You can also a food processor for a thicker consistency.
Pour the icecream into a bowl and add your favourite toppings.
