(vegan, no refined sugar, dairy-free)
These have recently been my favourite breakfast on the go. They are super easy to make and they are packed with so much goodness to power you through the day ahead. As the mashed bananas act as the main sweetener you can add very little or no sweetener at all. Thanks to Love Arctic Aurora Flaxseeds these bars are packed with omegas 3 and fibre which will keep you fuller for longer.
Makes about 6-8 bars depending on the size
2 medium size very ripe banana, mashed well with a fork
½ cup of fresh blueberries
½ cup of smooth and runny peanut butter
2 tbsp brown rice syrup or date syrup
2 tbsp of melted coconut oil
A dash of vanilla extract
¾ cup of porridge oats
1/3 cup of ground almond
⅓ cup of Love Arctic Aurora Flaxseeds
½ tsp baking powder
Line a brownies tin with some baking paper.
Start by preheating the oven at 180 degrees Celsius. In a bowl mix together the almond flour, oat flour, Love Arctic Flaxseeds and baking powder.
In a separate bowl add the peanut butter, mashed banana, rice syrup, coconut oil and vanilla extract. With a whisk mix everything together breaking down any lumps. You want the mixture to be as smooth and creamy as possible.
Pour the liquid ingredients into the bowl with the dry ingredients. Add the blueberries. Gently mix everything together. If the mixture is too dry add a splash of almond milk.
Bake the bars in the oven for 25-30 minutes until the edges start to turn golden brown. Remove the tin from the oven and let the cake cool down in the tray for 10 minutes before lifting it from the parchment paper and transfer it to a cooling rack until it’s completely cold. Cut it into slices and enjoy!
Store the bars in the fridge for few days.
