(vegan, no refined sugar, dairy-free)
This is the ideal breakfast to make in advance. I love making few jars to store in the fridge so it’s ready to go for when I don’t have the time to have a sit down breakfast. Thanks to the coconut milk and yogurt it’s super creamy and it literally feel like having a dessert for breakfast! This pudding is not only packed with fibre and healthy fats thanks to the chia seeds but it’s also a powerhouse of antioxidants thanks to the berries and Love Arctic Blackcurrant powder.
½ cup of chia seeds
1 cup of coconut milk
2 tablespoons of coconut yogurt
1 tablespoon of maple syrup (optional)
1 tablespoon of Love Arctic Organic Blackcurrant powder
½ cup of mixed berries – I have used raspberries & blueberries
1 teaspoon of vanilla extract
Place the berries into a blender and blend until you have a puree kind of consistency. Add a dash of coconut milk if your blender is struggling. You can also use a hand blender.
Ideally you want to make the chia pudding the night before. Place all the ingredients for the chia pudding into a large bowl and add the coconut milk. Mix everything together making sure you have no lumps.
Cover the bowl with some cling film or a plate and let it sit in the fridge for at least 1 hour or even better overnight. The chia pudding is ready when is thick and gloopy.
Add your favourite toppings and enjoy!
