I personally love make my own jam, it always taste so much better than the shop bought one and you can decide exactly how much sugar you want to add in.
Summer berries are always my first choice as I love their fresh sweetness. For this jam I chose blackberries but any other berries will work as well. Goes without saying that they are match made in heaven if paired with dried Bilberries and Bilberry powder. These power house berries add a delicate sharp flavour and most importantly incredible antioxidants and minerals.
To thicken up the jam without any added jelly I have used chia seeds which they naturally turn into a gelly consistency once mixed with any liquids. The result is a thick super fruity jam bursting with flavour and goodness.
Ingredients: Makes about 1 regular size jar
Place the blackberries in pan with a splash of water on a medium heat. Cover with the lid and bring it to boil. Once the fruit start to bubble away turn the heat down to a simmer. Add the chia seeds, dried lingonberry, Lingoberry powder and coconut sugar. Cook the jam on a low heat for about 20-25 minutes until it becomes gloopy and thick. Let it cool down before transferring to a jar. Don’t worry if it’s slightly runny when still hot, it will thicken up during cooling process.
Store in the fridge in an air tight jar for up to 7 days.
I love adding a generous spoonful of this jam in a hot steamy porridge or simply spread it on some rye bread with some fresh fruit.
